The ET47 (Ethiopian 47) variety produces a cherry well-endowed with mucilage. As such, this lot is a natural processed offering that has undergone two fermentations. An anaerobic fermentation for 96 hours is followed by an aerobic fermentation for 72 hours. Coffee is then dried on raised beds for 22 days. 

 

Orígenes is a project inspired by the love of specialty coffee, carried by friends Rebeca Moya, Edgar Silva and Ricardo Azofeifa with the support of international partners to not only celebrate the range of quality coffee produced in Costa Rica but to ensure Costa Ricans are also able to enjoy the best of their best, usually “destined for export”. Launched in 2016, the trio obtained a small portion of land that would serve as their canvas for growing and experimenting with different genetic materials. To date, they have planted 20 different varieties, most wild landraces from Africa with an anticipated high potential for success in the southern Brunca region, where Finca Orígenes is located. 

 

This lot is Orígenes’ first production of ET47, an isolated Ethiopian heirloom variety discovered in 1966 in the country’s Keffa Zone. ET47 is typically used as a parent plant to breed F1 hybrids to improve cup quality. It is not usually produced on its own. The result is a juicy, crisp and lively character that enters on notes of grape and dark cherry, and finishes on a rich, red wine backend.
